1 lb large shrimp, peeled and deveined

1 cup coconut milk

2 tablespoons coconut oil

3 cloves garlic, minced

1-inch piece ginger, minced

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 tablespoon lime juice

1 teaspoon lime zest

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

Salt and black pepper, to taste

Fresh cilantro, for garnish

Cooked jasmine rice or quinoa, for serving

Instructions
 

In a medium bowl, combine shrimp with a pinch of salt and pepper. Set aside.

    In a large skillet, heat coconut oil over medium heat. Add minced garlic and ginger, stirring for about 1 minute until fragrant.

      Add the sliced bell pepper and snap peas to the skillet, cooking for 2-3 minutes until they begin to soften.

        Pour in the coconut milk, lime juice, lime zest, soy sauce, and honey. Stir well and bring the mixture to a gentle simmer.

          Add the shrimp to the skillet, cooking until they turn pink and opaque, around 3-4 minutes depending on their size. Avoid overcooking.

            Taste and adjust seasoning with salt and pepper as needed.

              Serve the creamy coconut shrimp over a bed of jasmine rice or quinoa, drizzling any extra sauce over the top.

                Garnish with fresh cilantro before serving.
