Ingredients
  

4 salmon fillets (skinless)

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup heavy cream

½ cup grated Parmesan cheese

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Salmon: Season the salmon fillets generously with salt and pepper on both sides.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets and sear for about 4-5 minutes on each side, or until cooked through and golden brown. Remove the salmon from the skillet and set aside.

      Make the Sauce: In the same skillet, lower the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Add the halved cherry tomatoes and dried herbs, cooking for another 3-4 minutes until the tomatoes start to soften.

        Add Spinach: Stir in the fresh spinach and cook until wilted, about 2 minutes.

          Creamy Base: Pour in the heavy cream, stirring well to combine. Add the grated Parmesan cheese and lemon juice, and mix until the cheese melts and the sauce thickens slightly (about 2-3 minutes). Season with additional salt and pepper if necessary.

            Combine Salmon and Sauce: Return the seared salmon fillets to the skillet, spooning some of the creamy sauce over them. Let it simmer on low heat for another 2-3 minutes to warm through.

              Serve: Garnish with freshly chopped parsley and serve the creamy Tuscan garlic salmon over pasta, rice, or a bed of sautéed vegetables.
