Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

1 can (13.5 oz) coconut milk

2 tablespoons vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

2 green chilies, slit (adjust to taste)

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 tablespoon garam masala

1 teaspoon coriander powder

Salt, to taste

Fresh cilantro, chopped for garnish

Juice of 1 lime

Cooked basmati rice or naan, for serving

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry. Set aside.

    Heat the Oil: In a large skillet, heat the vegetable oil over medium heat. Add the mustard seeds and cumin seeds and sauté until they start to pop.

      Sauté Aromatics: Add the chopped onion and sauté until it turns translucent, about 5-7 minutes. Stir in the garlic, ginger, and green chilies, cooking for another 2-3 minutes until fragrant.

        Spice it Up: Add the turmeric, garam masala, coriander powder, and salt. Mix well and cook for 1-2 minutes.

          Add Coconut Milk: Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

            Cook the Shrimp: Add the shrimp to the skillet and cook for 5-7 minutes, or until the shrimp are opaque and cooked through. Do not overcook them to keep them tender.

              Finish the Dish: Squeeze fresh lime juice into the curry for a tangy kick. Taste and adjust seasoning if necessary.

                Serve: Remove from heat, garnish with chopped cilantro, and serve hot over cooked basmati rice or alongside naan.
