Ingredients
  

500g chicken thighs, boneless and skinless, cut into bite-sized pieces

1 can (400ml) coconut milk

2 medium onions, finely chopped

3 cloves garlic, minced

1 inch piece ginger, grated

2 medium tomatoes, pureed

2 tablespoons vegetable oil or coconut oil

1 tablespoon curry powder

1 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

1 cup spinach leaves (optional)

Instructions
 

In a large skillet or pot, heat the oil over medium heat. Add the chopped onions and sauté for 5-7 minutes until they are golden brown.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the pureed tomatoes to the pan along with the curry powder, coriander, cumin, turmeric, red chili powder, and salt. Cook for 5 minutes, stirring frequently, until the mixture thickens and oil begins to separate.

        Increase the heat to medium-high and add the chicken pieces to the pot. Sear the chicken for about 5 minutes until it is browned on all sides.

          Pour in the coconut milk and bring the mixture to a gentle simmer. Reduce the heat to low and cover the pot, cooking for 15-20 minutes or until the chicken is fully cooked and tender.

            If using, stir in the spinach leaves and cook for an additional 2-3 minutes until wilted.

              Remove from heat, add lime juice for a hint of freshness, and adjust salt if necessary.

                Garnish with fresh cilantro before serving.
