Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons ginger-garlic paste

1.5 teaspoons garam masala

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt to taste

4 tablespoons unsalted butter

1 large onion, finely chopped

2 medium tomatoes, pureed

1 cup heavy cream

2 teaspoons sugar (optional, to balance the acidity)

Fresh cilantro, for garnish

1-2 green chilies, slit (optional, for heat)

1 teaspoon kasuri methi (dried fenugreek leaves)

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces, yogurt, lemon juice, ginger-garlic paste, garam masala, turmeric, red chili powder, and salt. Mix well and let it marinate for at least 1 hour, or overnight in the refrigerator for maximum flavor.

    Cook the Chicken: In a large pan over medium heat, melt 2 tablespoons of butter. Add the marinated chicken and cook until browned and fully cooked, about 7-10 minutes. Remove the chicken from the pan and set aside.

      Prepare the Sauce: In the same pan, add the remaining butter. Once melted, sauté the chopped onions until golden brown (about 5-7 minutes). Stir in the pureed tomatoes and cook for another 10 minutes until the mixture thickens.

        Add Cream and Season: Lower the heat, add the heavy cream, and stir until well combined. If you want a hint of sweetness, add sugar at this stage. Season with kasuri methi and adjust salt if necessary.

          Combine: Return the cooked chicken to the sauce and stir to coat all pieces evenly. Simmer for an additional 5-10 minutes, allowing the flavors to meld together. Add slit green chilies if desired for extra heat.

            Garnish and Serve: Remove from heat and garnish with fresh cilantro. Serve hot with basmati rice or naan and enjoy your creamy and flavorful butter chicken!
