Ingredients

1 lb ground beef (80/20 blend)

8 strips of crispy bacon, chopped

4 large flour tortillas (10-12 inch)

1 cup shredded cheddar cheese

1 cup shredded iceberg lettuce

1 medium tomato, diced

½ cup diced onions

¼ cup pickles, chopped

½ cup sour cream

2 tablespoons ketchup

2 tablespoons mustard

Salt and pepper to taste

Olive oil for cooking

Instructions

Cook the Ground Beef: In a large skillet over medium heat, add a dash of olive oil. Once hot, add the ground beef. Season with salt and pepper. Cook until browned and fully cooked, breaking it apart as it cooks, about 7-8 minutes. Drain excess grease if necessary.

Cook the Bacon: In a separate pan, cook the chopped bacon strips over medium heat until crispy. Drain on paper towels to absorb excess grease and set aside.

Assemble the Filling: In a large mixing bowl, combine the cooked ground beef, crispy bacon, shredded cheddar cheese, diced tomatoes, onions, and pickles. Mix well until all ingredients are combined.

Prepare the Tortillas: Warm the flour tortillas in a dry skillet or microwave for about 20 seconds to make them pliable.

Fill the Burritos: Lay a warm tortilla on a flat surface. In the center, spread a layer of the beef-bacon mixture, leaving about 2 inches on each side. Top with a handful of shredded lettuce, a drizzle of sour cream, ketchup, and mustard.

Roll the Burritos: Starting from the end closest to you, fold the tortilla over the filling tightly. Then, fold in the sides and continue rolling until fully wrapped. Repeat with all tortillas.

Grill the Burritos (optional): For an added touch, place the burritos seam-side down in a hot skillet or grill. Cook for 2-3 minutes on each side until crispy and golden.

Serve: Slice the burritos in half diagonally if desired and place them on a serving platter. Garnish with additional shredded lettuce, diced tomatoes, and a dollop of sour cream.
