Ingredients

1 cup fresh parsley, packed

1/2 cup fresh cilantro, packed

4 cloves garlic, minced

1 teaspoon red pepper flakes

1/2 cup extra virgin olive oil

1/4 cup red wine vinegar

Juice of 1 lemon

Salt and pepper to taste

Instructions

Start by thoroughly washing the fresh parsley and cilantro under running water. Pat them dry using a paper towel or spin them in a salad spinner to remove excess water.

Finely chop the parsley and cilantro and place them in a medium-sized bowl.

Add the minced garlic to the bowl, followed by the red pepper flakes, ensuring a good mix of spices.

In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, salt, and pepper until well combined.

Pour the mixture over the chopped herbs and garlic. Using a spatula or a spoon, gently stir everything until the herbs are well coated with the dressing.

Taste the chimichurri and adjust seasonings if necessary, adding more salt, pepper, or red pepper flakes to your preference.

For the best flavor, let the chimichurri sit for at least 30 minutes at room temperature to allow the flavors to meld together.
