4 cups fresh corn kernels (or 2 cans of corn, drained)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for heat preference)

1/4 cup honey

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Heat the butter and olive oil in a large skillet over medium heat until the butter is melted and bubbling.

    Add the chopped red onion to the skillet and sauté for about 3-4 minutes until translucent.

      Stir in the minced garlic, smoked paprika, and cayenne pepper. Cook for an additional 1-2 minutes until fragrant.

        Add the fresh corn kernels to the skillet (or drained canned corn) and mix well.
