Ingredients

1 lb boneless, skinless chicken thighs

1/2 cup hot honey (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

2 cups cooked jasmine rice

1 cup broccoli florets (steamed)

1 cup shredded carrots

1/2 avocado, sliced

2 green onions, sliced

Sesame seeds, for garnish

Instructions

Prepare the Chicken: In a bowl, mix the hot honey, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes, or up to overnight in the fridge for more flavor.

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Remove the chicken from the marinade, shaking off excess. Place the chicken in the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F).

Glaze the Chicken: Once cooked, pour the remaining marinade over the chicken in the skillet and let it simmer for an additional 2-3 minutes, basting the chicken with the sauce until it thickens slightly.

Assemble the Bowls: In serving bowls, divide the cooked jasmine rice as a base. Layer on the steamed broccoli, shredded carrots, and sliced avocado.

Slice the Chicken: Remove the chicken from the skillet and slice it into strips. Arrange the chicken on top of the vegetable and rice mixture.

Garnish: Drizzle any remaining hot honey marinade over the chicken and bowls. Top with sliced green onions and sprinkle sesame seeds for added crunch.

Serve & Enjoy: Serve the Hot Honey Chicken Bowls warm, savoring the perfect blend of heat and sweetness!
