Ingredients

2 cups frozen corn (thawed or 2 cans of corn, drained)

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled (about 6-8 slices)

1/4 cup mayonnaise

1 tablespoon lime juice (optional, for brightness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, chopped (for garnish)

Tortilla chips (for serving)

Instructions

Prepare the Oven: Preheat your oven to 350°F (175°C).

Mix Ingredients: In a large mixing bowl, combine the thawed corn, softened cream cheese, sour cream, shredded cheddar cheese, crumbled bacon, mayonnaise, lime juice (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until all ingredients are well-combined and creamy.

Transfer to Baking Dish: Spread the mixture evenly into a 9x9 inch baking dish (or similar size), smoothing out the top with a spatula.

Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes or until the dip is bubbly and the top is slightly golden.

Garnish: Once baked, remove from the oven and let it cool for a few minutes. Sprinkle chopped green onions on top for a fresh finish.

Serve: Serve warm with tortilla chips for dipping. Enjoy your creamy, cheesy, and slightly smoky hot corn dip!
