Hot Chocolate Marshmallow Cookies

Ingredients
  

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup mini marshmallows

Extra chocolate chips for topping

Extra mini marshmallows for topping

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 3-4 minutes using an electric mixer.

      Add the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract.

        In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Fold in the semi-sweet chocolate chips and mini marshmallows. The dough will be thick and slightly sticky.

            Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

              Lightly press a few extra chocolate chips and mini marshmallows on top of each cookie dough ball for added decoration and gooeyness.

                Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the centers are still soft. Be careful not to overbake!

                  Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
