1/2 cup brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup mini chocolate chips

1 cup marshmallow fluff

1 cup powdered sugar

2 tablespoons milk

1 teaspoon vanilla extract (for frosting)

1/2 cup chocolate frosting (store-bought or homemade)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Beat in the eggs, one at a time, followed by the vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

            Fold in the mini chocolate chips for a delightful surprise in every bite.

              Scoop tablespoon-sized dough balls onto the prepared baking sheet, spacing them 2 inches apart.

                Bake in the preheated oven for 10-12 minutes, or until the edges are firm and the centers look slightly underbaked. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

                  Once the cookies are cool, use a piping bag or spoon to fill half of the cookies with marshmallow fluff.

                    For the frosting, mix together the powdered sugar, milk, and vanilla extract until smooth. Spread this frosting on top of the filled cookies, then place another cookie on top to create a sandwich.
