Ingredients
  

1 cup long-grain white rice

4 cups water

1 cinnamon stick

1 cup milk (dairy or plant-based)

½ cup ground coffee

½ cup sugar (adjust to taste)

1 teaspoon vanilla extract

Pinch of salt

Ice cubes for serving

Ground cinnamon for garnish

Instructions
 

Rinse the rice under cold water until the water runs clear to remove excess starch.

    In a blender, combine the rinsed rice, 4 cups of water, and the cinnamon stick. Blend on high for about 1 minute until the rice is roughly broken up.

      Let the mixture sit for at least 3 hours, or preferably overnight, to allow the flavors to meld and the rice to soften.

        After soaking, blend the rice mixture again until smooth, then strain through a fine-mesh sieve or cheesecloth into a large pitcher. Discard any solids.

          In a separate bowl, steep the ground coffee in 2 cups of hot water for about 5 minutes. Strain to remove the coffee grounds and combine the coffee with the rice milk mixture.

            Stir in the milk, sugar, vanilla extract, and a pinch of salt. Mix well until the sugar is fully dissolved. Adjust sweetness according to taste.

              Chill the horchata in the refrigerator for at least 30 minutes before serving.

                Serve the horchata de café over ice, and garnish with a sprinkle of ground cinnamon.
