Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup walnuts

1 cup cornstarch

1/2 cup vegetable oil (for frying)

1/4 cup mayonnaise

2 tablespoons honey

1 tablespoon sweetened condensed milk

1 teaspoon lemon juice

Salt to taste

Chopped green onions for garnish

Instructions

Prepare the Walnuts: In a small saucepan, bring water to a boil. Add walnuts and blanch for 1-2 minutes. Drain and rinse with cold water. In the same pan, combine 1/2 cup sugar and 1/2 cup water and bring to a simmer. Add the blanched walnuts and cook on low until the syrup thickens and coats the walnuts. Remove and allow to cool on parchment paper.

Prepare the Shrimp: In a large bowl, toss the peeled and deveined shrimp with salt and set aside.

Coat the Shrimp: Dredge each shrimp in cornstarch until well coated. Shake off the excess.

Fry the Shrimp: Heat vegetable oil in a large skillet over medium-high heat. Fry the coated shrimp in batches until golden brown and crispy, about 2-4 minutes per side. Remove and drain on paper towels.

Prepare the Sauce: In a separate bowl, mix mayonnaise, honey, sweetened condensed milk, and lemon juice until smooth and well combined.

Combine: In a large mixing bowl, gently toss the fried shrimp with the sauce until well coated.

Serve: Plate the shrimp and top with candied walnuts. Garnish with chopped green onions for a burst of color and flavor.
