4 salmon fillets (6 oz each)

1 cup fresh pineapple, diced

1/3 cup honey

2 tablespoons soy sauce (low sodium)

1 tablespoon fresh ginger, grated

1 garlic clove, minced

1 tablespoon olive oil

Salt and pepper to taste

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, grated ginger, and minced garlic until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Cover and let it marinate in the refrigerator for at least 30 minutes.

      Sauté the Pineapple: In a skillet, heat olive oil over medium heat. Add the diced pineapple and sauté for 3-4 minutes until they are slightly caramelized and tender. Remove from the skillet and set aside.

        Cook the Salmon: In the same skillet, place the marinated salmon fillets skin-side down. Cook for 4-5 minutes on medium-high heat, then carefully flip and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Add the Remaining Marinade: Pour the remaining marinade into the skillet during the last minute of cooking, allowing it to bubble and thicken slightly.

            Combine: Gently stir the sautéed pineapple into the skillet with the salmon, coating them with the sauce for added flavor.

              Serve: Arrange the salmon and pineapple on serving plates, drizzle any remaining sauce over the top. Garnish with sliced green onions and sprinkle with sesame seeds.
