1 ½ pounds pork tenderloin

¼ cup honey

¼ cup Dijon mustard

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried)

Salt and pepper to taste

Prepare the Marinade: In a medium bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, rosemary, thyme, salt, and pepper until well combined.

    Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 6 hours for deeper flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Pork: In a large oven-safe skillet over medium-high heat, add a drizzle of olive oil. Remove the pork from the marinade (reserve the marinade for later) and sear it on all sides until golden brown, about 3-4 minutes per side.

          Bake the Pork: Once seared, pour the reserved marinade over the pork tenderloin. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).

            Rest and Slice: Remove the pork from the oven and let it rest for about 5-10 minutes before slicing. This helps retain its juices.
