4 boneless, skinless chicken thighs

1/4 cup honey

1/4 cup fresh lemon juice

4 garlic cloves, minced

2 tablespoons soy sauce (low-sodium)

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium bowl, whisk together honey, lemon juice, minced garlic, soy sauce, olive oil, thyme, salt, and pepper to create the marinade.

    Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they are well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 3 hours for deeper flavor).

      Preheat your oven to 400°F (200°C).

        Remove the chicken from the marinade and arrange in a baking dish. Drizzle a little extra marinade on top for flavor.

          Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).

            Optional: In the last 5 minutes of baking, turn on the broiler to caramelize the top of the chicken for a crispy finish. Keep an eye on it to prevent burning.

              Once done, remove the chicken from the oven and let it rest for 5 minutes.

                Garnish with freshly chopped parsley before serving.
