Honey Garlic Pork Chops with Mashed Potatoes

For the Pork Chops:

4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons vegetable oil

1/4 cup honey

4 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

For the Mashed Potatoes:

4 large russet potatoes, peeled and cubed

1/2 cup milk (or heavy cream)

4 tablespoons unsalted butter

Salt and pepper, to taste

Chives or parsley, for garnish (optional)

Instructions
 

Prepare the Mashed Potatoes:

    - Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

      - Drain the potatoes and return them to the pot. Add the butter and warm milk (or cream). Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

        Cook the Pork Chops:

          - While the potatoes are cooking, season both sides of the pork chops with salt and pepper.

            - In a large skillet, heat the vegetable oil over medium-high heat. Add the pork chops and sear on both sides until golden brown and cooked through, about 4-5 minutes per side. The internal temperature should reach 145°F (63°C). Remove the pork chops from the skillet and cover to keep warm.

              Make the Honey Garlic Sauce:

                - In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

                  - Stir in the honey, soy sauce, apple cider vinegar, and thyme. Let the sauce simmer for about 2-3 minutes until slightly thickened. Return the pork chops to the skillet, coating them well in the sauce, and cook for an additional minute.

                    Serve:

                      - Plate the mashed potatoes and top with a pork chop. Drizzle the honey garlic sauce generously over the chop. Garnish with chopped chives or parsley if desired.
