Ingredients
  

1 lb (450g) chicken breast, cut into 1-inch cubes

1/4 cup honey

2 tablespoons soy sauce (low-sodium preferred)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon rice vinegar

Salt and pepper to taste

1 bell pepper, cut into 1-inch pieces (red or yellow)

1 small zucchini, sliced into thick rounds

Wooden skewers (soaked in water for at least 30 minutes if using bamboo)

Instructions
 

In a mixing bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, salt, and pepper until well combined to make the marinade.

    Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for best flavor).

      While the chicken marinates, prepare the vegetables. Cut the bell pepper and zucchini into appropriate sizes for skewering.

        Preheat the grill or grill pan to medium-high heat.

          After marinating, thread the chicken onto the skewers, alternating with pieces of bell pepper and zucchini. Aim for 4-5 pieces of chicken per skewer.

            Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F (75°C).

              Brush any leftover marinade over the skewers during the last few minutes of cooking for added flavor.

                Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
