2 pounds of chicken thighs (bone-in, skin-on for extra flavor)

1/3 cup honey

1/4 cup soy sauce (low sodium preferred)

5 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper to taste

2 tablespoons vegetable oil (for cooking)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, whisk together the honey, soy sauce, minced garlic, ginger, rice vinegar, sesame oil, and red pepper flakes. Place the chicken thighs in a resealable bag or shallow dish, pour the marinade over them, and refrigerate for at least 1 hour (or overnight for more flavor).

    Preheat the Oven: If you plan to finish the chicken in the oven, preheat to 375°F (190°C).

      Sear the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and season it with salt and pepper. Place the chicken thighs skin-side down in the skillet and sear for about 5-7 minutes until crispy and golden brown. Flip and sear the other side for another 5 minutes.

        Add the Marinade: Once both sides are browned, pour the reserved marinade over the chicken. Bring it to a simmer, then reduce the heat to low to let it simmer for about 10 minutes.

          Finish Cooking (Optional): If you prefer, transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

            Glaze the Chicken: Remove the chicken from the oven (if using) and let it rest for a few minutes. Meanwhile, increase the heat of the skillet to medium-high and let the sauce reduce for a few minutes until it thickens slightly.

              Serve: Serve the chicken warm, drizzled with the thickened sauce, and garnish with chopped green onions and sesame seeds. Pair it with steamed jasmine rice and vegetables for a complete meal.
