Ingredients
  

1 pound of baby carrots, scrubbed and trimmed

3 tablespoons olive oil

2 tablespoons honey

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

1 teaspoon dried thyme (or fresh thyme, chopped)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, garlic powder, dried thyme, salt, and pepper. Whisk together until well combined.

      Add the baby carrots to the bowl and toss them in the honey-balsamic mixture until evenly coated.
