For the wontons:

1 cup ground pork (or chicken)

1/4 cup thinly sliced green onions

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon grated ginger

1 package wonton wrappers

For the broth:

6 cups chicken or vegetable broth

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 cup bok choy, chopped

1/4 cup mushrooms (shiitake or button), sliced

Salt and pepper to taste

Garnishes:

Chopped fresh cilantro

Extra sliced green onions

Sriracha (optional, for heat)

Prepare the Wontons: In a mixing bowl, combine the ground pork, green onions, soy sauce, sesame oil, and grated ginger. Mix well until all ingredients are evenly incorporated.

    Fill the Wontons: Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center of the wrapper. Wet the edges with water, fold the wrapper in half to create a triangle, and press the edges to seal. Bring the two outer corners together and pinch to form the wonton shape. Repeat until all filling is used.

      Make the Broth: In a large pot, heat a little oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Pour in the chicken or vegetable broth. Add soy sauce, rice vinegar, and sesame oil, mixing well. Bring to a simmer.

        Cook the Wontons: Once the broth is simmering, gently add the prepared wontons and cook for about 5-6 minutes, or until they float to the top and are cooked through.

          Add Vegetables: Stir in the chopped bok choy and sliced mushrooms. Cook for an additional 2-3 minutes, just until the bok choy is wilted and the mushrooms are tender.

            Season: Taste the broth and adjust seasoning with salt and pepper as needed.

              Serve: Ladle the soup into bowls, making sure to include wontons and vegetables in each serving. Garnish with chopped cilantro and sliced green onions. If you like a bit of heat, add a drizzle of Sriracha on top.
