Ingredients

4 boneless, skinless chicken thighs

1 cup orange juice

1/4 cup lime juice

4 cloves garlic, minced

1 tablespoon honey

2 teaspoons chili powder

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a large bowl, whisk together the orange juice, lime juice, minced garlic, honey, chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper (if using).

Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat over medium-high on the stovetop. Lightly brush the grill grates or grill pan with olive oil to prevent sticking.

Grill the Chicken: Remove the chicken from the marinade (discard the marinade). Place the chicken thighs on the preheated grill. Cook for about 5-7 minutes on each side or until the internal temperature reaches 165°F (74°C) and the juices run clear.

Rest and Slice: Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute. After resting, slice the chicken into strips.

Serve: Arrange the grilled pollo loco on a platter, sprinkle with fresh cilantro, and serve with lime wedges on the side for a burst of fresh flavor. You can pair it with rice, beans, or as a filling for tacos.
