4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 tablespoons Italian seasoning

1 tablespoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

2 large eggs

½ cup all-purpose flour

1/4 cup olive oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, paprika, salt, and pepper. Mix well.

      Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and the third with the breadcrumb mixture.

        Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.

          Dredge each chicken breast in the flour, shaking off the excess.

            Dip the floured chicken into the beaten eggs, allowing any excess to drip off.

              Finally, coat the chicken in the Parmesan breadcrumb mixture, pressing down firmly to ensure a thick layer adheres.

                In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Cook for about 3-4 minutes per side, or until golden brown.

                  Transfer the chicken breasts to the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until the internal temperature reaches 165°F (75°C) and the crust is crispy and golden.

                    Remove from the oven and let rest for 5 minutes before garnishing with freshly chopped parsley.
