2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk (or milk with 1 tablespoon vinegar mixed in)

1 tablespoon fresh herbs (such as rosemary, thyme, or chives), finely chopped

1 tablespoon honey (optional, for a touch of sweetness)

Instructions
 

Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until evenly combined.

      Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, rub the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Stir in the chopped fresh herbs and honey (if using) until evenly distributed.

          Pour in the buttermilk and gently mix until just combined. Do not overwork the dough; it should be slightly sticky but manageable.

            Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick.

              Fold the dough over itself three times to create layers, which will help create flaky biscuits.

                Roll the dough out to about 1-inch thick again and cut out biscuits using a round cutter or a glass. Place them on the prepared baking sheet, leaving space in between.

                  Bake in the preheated oven for 12-15 minutes or until golden brown on top.

                    Remove from the oven and let cool slightly before serving.
