Ingredients

200g rice noodles

250g beef sirloin, thinly sliced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon ginger, grated

2 stalks green onions, chopped (white and green parts separated)

1 bell pepper, sliced (any color)

1 carrot, julienned

3 tablespoons hoisin sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

Fresh cilantro, for garnish

Sesame seeds, for garnish

Instructions

Begin by cooking the rice noodles according to the package instructions. Once cooked, drain and set aside, tossing with a little sesame oil to prevent sticking.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.

Toss in the sliced beef sirloin and stir-fry for 2-3 minutes until browned and cooked through.

Remove the beef from the skillet and set aside on a plate. In the same skillet, add the white parts of the green onions, bell pepper, and carrot. Stir-fry for about 3-4 minutes until slightly tender but still crisp.

Return the cooked beef to the skillet with the vegetables. Pour in the hoisin sauce and soy sauce, stirring well to coat everything evenly.

Add the rice noodles to the skillet and gently toss everything together until heated through, about 2 minutes. Drizzle with rice vinegar and sesame oil for added flavor.

Finally, remove from heat, and sprinkle the green parts of the green onions, and garnish with fresh cilantro and sesame seeds.
