1 pound ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) mixed vegetables, drained

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

4 medium potatoes, thinly sliced

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley for garnish (optional)

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Cook Ground Beef: In a large skillet over medium heat, brown the ground beef. Add the chopped onion and minced garlic, cooking until the onion is translucent. Season with salt, pepper, and Italian seasoning. Drain excess fat if necessary.

      Layer Ingredients: In a greased 9x13 inch baking dish, start by layering half of the sliced potatoes on the bottom. Follow with the cooked ground beef mixture, spreading it evenly. Then layer the mixed vegetables over the beef.

        Add Cream of Mushroom Soup: Pour the cream of mushroom soup over the mixed vegetables, spreading it out to cover the entire layer.

          Top with Remaining Potatoes: Add the remaining sliced potatoes on top of the soup layer. Sprinkle with additional salt and pepper for flavor.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

              Add Cheddar Cheese: Remove the foil, sprinkle the shredded cheddar cheese over the top, and return to the oven uncovered for an additional 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                Serve: Once done, let it cool for a few minutes. Garnish with fresh parsley if desired, then scoop and serve warm.
