1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

3 cups mixed frozen vegetables (carrots, peas, corn, beans)

1 (10.5 oz) can of cream of mushroom soup

1 (10 oz) can of diced tomatoes with green chilies

2 cups cooked rice (brown or white)

1 tsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, brown the ground beef. Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent and the beef is fully cooked, about 5-7 minutes. Drain any excess fat.

      Combine Ingredients: In the skillet, add the mixed vegetables, cream of mushroom soup, diced tomatoes with green chilies, cooked rice, Worcestershire sauce, dried thyme, salt, and pepper. Stir everything together until mixed well.

        Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

          Add Cheese: Sprinkle the shredded cheddar cheese generously over the top of the casserole.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
