Ingredients
  

1 pound ground turkey (or lean ground beef)

1 medium onion, diced

3 cloves garlic, minced

1 carrot, diced

1 zucchini, diced

2 cups spinach (fresh or frozen)

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 tablespoons tomato paste

2 teaspoons dried basil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

8 ounces whole wheat or lentil pasta (fusilli or rotini work well)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

Fresh basil or parsley for garnish

Instructions
 

Cook the Meat: In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the ground turkey (or beef) and cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes). Remove excess fat if necessary.

    Sauté Vegetables: Add the diced onion, garlic, carrot, and zucchini to the pot. Sauté for about 5 minutes until the vegetables are tender.

      Add Tomatoes and Seasonings: Stir in the crushed tomatoes, chicken or vegetable broth, tomato paste, dried basil, oregano, red pepper flakes, and season with salt and pepper. Bring to a simmer.

        Cook the Pasta: Once the soup is simmering, add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.

          Incorporate Spinach: In the last 2-3 minutes of cooking, add the spinach to the pot. Stir until wilted if using fresh, or heated through if using frozen.

            Prepare Ricotta Mixture: In a small bowl, mix the ricotta cheese with a pinch of salt, pepper, and a tablespoon of fresh chopped basil or parsley.

              Serve: Ladle the soup into bowls. Add a dollop of the ricotta mixture on top, and sprinkle the shredded mozzarella cheese over it. Garnish with additional basil or parsley if desired.

                Enjoy: Serve warm with crusty whole grain bread or a side salad for a complete meal.
