1 lb (450g) lean ground beef (90% lean)

1 medium onion, diced

3 cloves garlic, minced

1 cup low-sodium beef broth

1 cup cottage cheese (or Greek yogurt for extra protein)

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional for heat)

Salt and pepper to taste

2 cups fresh spinach (or other greens)

1 tbsp olive oil

Cook Pasta: In a large pot, bring salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
