4 bone-in pork chops (about 1-inch thick)

2 tablespoons olive oil

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

1 tablespoon fresh parsley, finely chopped

4 cloves garlic, minced

4 tablespoons unsalted butter

Salt and pepper, to taste

Lemon wedges, for serving

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Create the Herb Mixture: In a small bowl, combine the rosemary, thyme, and parsley. Rub this herb mixture over both sides of the pork chops, pressing it into the meat.

      Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops to the skillet and sear them for about 4-5 minutes on each side, or until they are nicely browned and an internal temperature of 145°F is reached.

        Make the Garlic Butter: While the pork chops are cooking, in a small saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn the garlic.

          Baste the Chops: Once the pork chops are done, reduce the heat to low and pour the garlic butter over the chops in the skillet. Allow them to cook for an additional minute, basting them with the melted garlic butter.

            Rest and Serve: Remove the pork chops from the skillet and let them rest for about 5 minutes. Serve with lemon wedges for a bright touch along with any pan drippings.
