3 cups all-purpose flour

1 packet (2 1/4 teaspoons) instant yeast

1 teaspoon salt

1 tablespoon sugar

1 cup warm water (110°F)

1/4 cup unsalted butter, melted

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon olive oil

1/4 teaspoon red pepper flakes (optional)

1/2 cup shredded mozzarella cheese (optional)

Instructions
 

In a large bowl, mix together the flour, instant yeast, salt, and sugar.

    Gradually add warm water and melted butter, stirring until a dough begins to form.

      Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.

        Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

          While the dough is rising, prepare the filling mixture. In a medium bowl, combine the minced garlic, chopped herbs (rosemary, thyme, parsley), olive oil, and red pepper flakes. Mix well.

            Once the dough has risen, preheat your oven to 375°F (190°C) and punch down the dough.

              Roll the dough out on a floured surface into a large rectangle (about 12x18 inches).

                Spread the herb and garlic mixture evenly over the surface of the dough, leaving a 1-inch border.

                  If using, sprinkle the shredded mozzarella evenly over the herb mixture.

                    Starting from one long edge, carefully roll the dough tightly into a log, pinching the seam to seal.

                      Cut the log into 12 equal pieces and place them cut-side up in a greased 9x13-inch baking dish.

                        Cover the rolls with a cloth and let them rise for another 30 minutes.

                          Bake in the preheated oven for 20-25 minutes or until golden brown.

                            Remove from the oven and let them cool for a few minutes before serving.
