Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped walnuts

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract (for cream)

Extra chopped walnuts for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs, mashed bananas, and 1 teaspoon of vanilla extract, mixing until well combined.

Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix. Fold in the chopped walnuts.

Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Cream: While the cake cools, whip the heavy cream in a chilled bowl using an electric mixer until soft peaks form. Gradually add the powdered sugar and 1 teaspoon of vanilla extract, continuing to whip until stiff peaks form.

Assemble the Cake: Once the cake is completely cool, slice it horizontally to create two layers (if desired). Spread a generous layer of whipped cream in between the two layers and on top of the cake.

Garnish: Top the cake with extra chopped walnuts for a decorative touch.

Chill (Optional): For best flavor, chill the cake in the refrigerator for at least 30 minutes before serving.
