2 large ripe bananas, mashed

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

3 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

1 cup walnuts, chopped

1/2 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract (for the whipped cream)

Extra walnuts for garnish

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the mashed bananas, eggs, and 1 teaspoon of vanilla extract to the butter mixture. Beat well until combined.

        In another bowl, sift together the flour, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.

            Fold in the chopped walnuts gently into the batter.

              Divide the batter evenly between the prepared cake pans and smooth the tops.

                Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

                  While the cakes are cooling, whip the heavy cream with the powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form.

                    Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of whipped cream on top, then add the second cake layer on top.

                      Top the cake with the remaining whipped cream and garnish with extra chopped walnuts for decoration.
