1 large smoked ham bone with meat still attached

6 cups low-sodium chicken broth

2 large potatoes, diced

2 cups green cabbage, chopped

1 large onion, diced

3 cloves garlic, minced

2 carrots, diced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon black pepper

2 bay leaves

Salt to taste

Fresh parsley for garnish (optional)

In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft and the onion is translucent.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes, chopped cabbage, dried thyme, black pepper, and bay leaves to the pot.

        Nestle the smoked ham bone into the mixture and pour in the chicken broth. Make sure the liquid covers the ingredients; add more broth or water if necessary.
