Ingredients
  

2 cups diced cooked ham

1 cup dried navy beans (or cannellini beans), soaked overnight and drained

4 cups chicken broth

1 cup diced carrots (about 2 carrots)

1 cup diced celery (about 2 stalks)

1 large onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

    Add Ham & Spices: Stir in the diced ham, dried thyme, smoked paprika, and season with salt and pepper. Cook for an additional 2-3 minutes to let the flavors combine.

      Combine Beans & Broth: Add the soaked beans and chicken broth to the pot. Stir to combine and bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, add the bay leaf, and let the soup simmer uncovered for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add water as needed to maintain the desired consistency.

          Finish & Serve: When the beans are tender, taste and adjust seasoning with more salt and pepper if needed. Remove the bay leaf before serving. Ladle the soup into bowls and garnish with chopped fresh parsley.
