Ingredients
  

2 medium sweet potatoes, peeled and diced

3 large carrots, peeled and sliced

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon honey or maple syrup (optional for sweetness)

1/4 cup fresh parsley, chopped (for garnish)

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the diced sweet potatoes and sliced carrots.

      Drizzle the olive oil over the vegetables, then sprinkle in the cinnamon, ginger, salt, and black pepper.

        Toss the vegetables until they are evenly coated with the oil and spices.

          If desired, drizzle honey or maple syrup over the mixture for added sweetness, and toss again.

            Spread the seasoned sweet potato and carrot mixture evenly on a baking sheet lined with parchment paper.

              Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes and carrots are tender and slightly caramelized, tossing once halfway through cooking.

                Once roasted, remove the baking sheet from the oven and let it cool for a couple of minutes.

                  Garnish with fresh parsley and feta cheese, if using, before serving.
