4 boneless, skinless chicken breasts

2 cups mushrooms, finely chopped (such as cremini or button)

1 cup spinach, chopped

1/2 cup low-fat cream cheese, softened

1/2 cup feta cheese, crumbled

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

1/2 teaspoon paprika

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

      Add the chopped mushrooms and cook until they release their moisture and become tender, about 5-7 minutes. Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.

        Remove from heat and allow the mushroom mixture to cool slightly. In a bowl, combine the cooled mixture with cream cheese, feta cheese, dried thyme, salt, pepper, and paprika. Stir until well combined.

          With a sharp knife, create a pocket in each chicken breast by slicing it horizontally without cutting all the way through.

            Stuff each chicken breast with the mushroom and cheese mixture, ensuring they are filled generously. Secure with toothpicks if necessary.

              Place the stuffed chicken breasts in a baking dish and season the outside with salt and pepper.

                Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and no longer pink in the center (internal temperature should reach 165°F or 75°C).

                  Remove from the oven, let it rest for 5 minutes, and garnish with fresh parsley before serving.
