2 boneless, skinless chicken breasts

Salt and freshly ground black pepper, to taste

1/2 cup whole wheat flour (or almond flour for a gluten-free option)

2 tablespoons olive oil

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup low-sodium chicken broth

Juice of 2 large lemons (about 1/2 cup)

Zest of 1 lemon

1/4 cup capers, rinsed and drained

Fresh parsley, chopped (for garnish)

Optional: Lemon slices for serving

Prepare the Chicken: Slice each chicken breast in half horizontally to create thinner cutlets. Season both sides with salt and pepper. Dredge each cutlet lightly in whole wheat flour, shaking off the excess.

    Cook the Chicken: In a large skillet over medium heat, heat the olive oil and 1 tablespoon of butter. Once hot, add the chicken cutlets. Cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove the cutlets from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, lemon juice, and lemon zest, scraping up any browned bits from the skillet. Bring the mixture to a simmer.

        Add the Capers: Stir in the capers and return the chicken cutlets to the skillet. Cook for an additional 2-3 minutes, allowing the chicken to soak in the flavors. Add the remaining tablespoon of butter to the sauce, stirring until melted and slightly thickened.

          Serve: Plate the chicken cutlets and spoon the lemon-caper sauce over the top. Garnish with freshly chopped parsley and serve with lemon slices for an extra zest.
