4 flounder fillets

2 large eggs

1/2 cup whole wheat breadcrumbs

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

2 tablespoons lemon juice

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

Lemon wedges for serving

Instructions
 

Begin by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper.

    In a shallow bowl, whisk the eggs with lemon juice, a pinch of salt, and pepper until well combined.

      In another shallow bowl, mix the whole wheat breadcrumbs, grated Parmesan cheese, and chopped parsley.

        Dip each flounder fillet into the egg mixture, ensuring it's fully coated, then transfer the fillet to the breadcrumb mixture, pressing lightly to adhere the crumbs to the fish. Repeat this step for all fillets.

          Heat olive oil in a non-stick skillet over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

            Carefully place the coated flounder fillets in the skillet, cooking for about 2-3 minutes on each side until golden brown. You may need to do this in batches to avoid overcrowding the pan.

              Once browned, transfer the flounder fillets to the prepared baking sheet and bake in the preheated oven for an additional 7-10 minutes until cooked through and flaky.

                Remove from the oven and let rest for a couple of minutes before serving.
