1 cup Medjool dates, pitted

1/2 cup natural peanut butter

1/2 cup roasted peanuts

1/4 cup unsweetened cocoa powder

1/4 cup coconut oil

1 tablespoon pure maple syrup (optional, for extra sweetness)

1/2 teaspoon vanilla extract

A pinch of sea salt

Dark chocolate chips (optional for drizzling)

In a food processor, blend the pitted Medjool dates until they form a smooth paste. Scrape down the sides as needed to ensure even blending.

    Transfer the date paste into a bowl and add the peanut butter, vanilla extract, and a pinch of sea salt. Mix until well combined. If desired, add maple syrup for additional sweetness and mix again.

      Fold in the roasted peanuts, reserving a few for topping later.

        Line a small baking dish (about 8x8 inches) with parchment paper, leaving some overhang for easy removal.

          Spread the date-peanut mixture evenly into the lined baking dish, pressing down firmly to create a compact layer. Refrigerate for 30 minutes to firm up.

            While the base is firming, melt the coconut oil and cocoa powder together in a small saucepan over low heat, stirring until smooth. Remove from heat and let cool slightly.

              Once the base is firm, pour the melted chocolate mixture over it, spreading it evenly.

                Sprinkle the reserved roasted peanuts on top and gently press them into the chocolate layer.

                  Return the dish to the fridge for another 20-30 minutes, or until the chocolate is set.

                    Once set, lift the Healthy Date Snickers out of the dish using the parchment paper. Cut into bars or squares.
