1 cup whole wheat flour

1/2 cup cocoa powder

1/2 cup unsweetened applesauce

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it.

    In a large mixing bowl, whisk together whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well combined.

      In another bowl, combine unsweetened applesauce, honey or maple syrup, melted coconut oil, and vanilla extract. Mix until smooth.

        Gradually add the wet mixture to the dry ingredients while stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          If using, fold in the dark chocolate chips and chopped nuts.

            Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.

              Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean.

                Allow to cool in the tin for 5 minutes, then transfer the muffins to a wire rack to cool completely.
