3 cups frozen hash browns, thawed

6 large eggs

1 cup shredded cheddar cheese (or cheese of choice)

1 cup cooked and crumbled breakfast sausage (or plant-based alternative)

1 small onion, finely chopped

1 bell pepper, diced (any color)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

2 tablespoons fresh parsley, chopped for garnish

1 tablespoon olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a standard loaf pan with non-stick cooking spray or a little olive oil.

    Prepare the Hash Browns: In a large bowl, combine the thawed hash browns, salt, black pepper, garlic powder, and onion powder. Mix thoroughly to ensure the seasonings are evenly distributed.

      Cook the Vegetables: Heat the olive oil in a skillet over medium heat. Add the chopped onion and bell pepper and sauté until the vegetables are soft, about 5-7 minutes. Set aside to cool slightly.

        Mix the Egg Mixture: In another bowl, whisk together the eggs. Add the cooked sausage and sautéed onion and bell pepper to the eggs, followed by the shredded cheese. Stir until well combined.

          Combine Ingredients: Gently fold the hash brown mixture into the egg and sausage mixture until everything is well integrated.
