When it comes to crafting the perfect hamburger steak, the choice of ground beef is crucial. The fat content in the beef significantly influences the flavor, moisture, and texture of the patties. For this recipe, using ground beef with an 80% lean to 20% fat ratio is often recommended. This balance allows for a juicy patty that retains its flavor during cooking, ensuring a delightful eating experience. The fat not only contributes to the beef’s rich taste but also helps keep the patties from drying out, making each bite as satisfying as the last.

Ingredients

1 pound ground beef (80% lean)

1 medium onion, thinly sliced

2 cloves garlic, minced

1/2 cup breadcrumbs

1 egg

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 cups beef broth

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for cornstarch slurry)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Patties: In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, salt, and black pepper. Mix until just combined, then shape into four equal patties.

Cook the Patties: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the patties to the skillet and cook for about 4-5 minutes on each side until browned and cooked through. Remove the patties from the skillet and set aside.

Sauté the Onions: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and cook over medium heat, stirring occasionally, until the onions are caramelized and golden brown, about 10-12 minutes. Add the minced garlic and sauté for another minute.

Make the Gravy: Pour in the beef broth and bring to a simmer. Scrape any browned bits from the bottom of the skillet to incorporate the flavor. If you prefer a thicker gravy, mix the cornstarch with water to create a slurry and add it to the skillet, stirring until combined and thickened.

Combine Patties and Gravy: Return the hamburger patties to the skillet with the onion gravy. Spoon some of the gravy over the patties and let them simmer for an additional 3-5 minutes to meld the flavors.

Serve: Remove from heat and garnish with fresh parsley. Serve the hamburger steak warm, topped with the onions and gravy, alongside mashed potatoes or rice for a complete meal.
