Ingredients
  

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

4 cups russet potatoes, peeled and thinly sliced

1 cup shredded cheddar cheese

1 cup sour cream

1 cup beef broth

2 teaspoons dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen mixed vegetables (peas, carrots, corn)

½ teaspoon paprika for garnish

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Beef: In a skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat.

      Sauté Vegetables: Add diced onion and minced garlic to the skillet. Cook until the onion is translucent, about 5 minutes.

        Layer the Casserole: In a greased 9x13 inch baking dish, layer half of the thinly sliced potatoes at the bottom. Sprinkle half of the cooked ground beef mixture over the potatoes, followed by half of the frozen mixed vegetables. Repeat layers, ending with potatoes on top.

          Prepare the Sauce: In a mixing bowl, combine sour cream, beef broth, oregano, salt, pepper, and paprika. Mix well until smooth.

            Pour the Sauce: Pour the prepared sauce evenly over the top layer of potatoes in the casserole.

              Add Cheese: Sprinkle cheddar cheese generously over the top.

                Cover and Bake: Cover with aluminum foil and bake in the preheated oven for 45 minutes.

                  Uncover and Finish Baking: Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                    Garnish and Serve: Allow the casserole to cool for about 5 minutes. Garnish with fresh parsley and serve hot.
