Ingredients
  

1 sheet of puff pastry, thawed

8 slices of deli ham

8 ounces of shredded cheese (cheddar, mozzarella, or your favorite blend)

1 tablespoon Dijon mustard

1 egg, beaten (for egg wash)

Freshly ground black pepper (to taste)

Optional: Fresh chives, finely chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    On a lightly floured surface, roll out the puff pastry sheet until it’s about ¼ inch thick.

      Cut the puff pastry into 16 rectangles (approximately 3x4 inches each).

        On each rectangle, spread a thin layer of Dijon mustard, then place a slice of ham and sprinkle cheese over the ham.

          Season with freshly ground black pepper.

            Fold the pastry over to create a pocket, then seal the edges by pressing down with a fork.

              Brush the tops of the pastry pockets with the beaten egg to give them a golden finish.

                Place the pockets on the prepared baking sheet, spacing them out to allow for puffing during baking.

                  Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed up.

                    Once baked, remove from the oven and let cool slightly. If desired, sprinkle with finely chopped chives for added flavor and color before serving.
