Ingredients
  

1 lb ground lamb (or beef or a mix of both)

1 small onion, finely grated

3 cloves garlic, minced

2 tsp dried oregano

1 tsp ground cumin

1 tsp paprika

½ tsp ground black pepper

1 tsp salt

½ tsp ground allspice

1 tbsp fresh parsley, chopped

1 tbsp olive oil

½ cup breadcrumbs

1 egg

Prepare the Meat Mixture: In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, oregano, cumin, paprika, black pepper, salt, allspice, parsley, olive oil, breadcrumbs, and egg.

    Mix Thoroughly: Using your hands or a spatula, mix all the ingredients until well blended. The mixture should be sticky enough to hold together but not too dry.

      Shape the Meat: Form the mixture into a loaf shape or divide into smaller patties, depending on your preferred serving style.

        Chill: Place the formed meat in the refrigerator for at least 1 hour to firm up; this helps the spices meld and makes it easier to cook.

          Cook the Gyro Meat: Preheat your grill or skillet over medium heat. Cook the meat for about 5-7 minutes on each side (if using patties), or 10-15 minutes if cooking the whole loaf until it's well browned and cooked through. The internal temperature should reach 160°F (70°C).

            Rest and Slice: Once cooked, let the gyro meat rest for a few minutes before slicing thinly against the grain.

              Serve: Serve the sliced gyro meat in pita bread with your favorite toppings such as lettuce, tomatoes, onion, and a drizzle of tzatziki sauce.
