4 chicken thighs (bone-in, skin-on for extra flavor)

1 cup Guinness stout beer

1/4 cup soy sauce

3 tablespoons brown sugar

2 tablespoons Dijon mustard

4 cloves garlic, minced

1 large onion, diced

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon black pepper

1/2 teaspoon salt

Chopped fresh parsley for garnish

Marinate the Chicken: In a bowl, mix together the Guinness, soy sauce, brown sugar, Dijon mustard, minced garlic, thyme, black pepper, and salt. Add the chicken thighs, ensuring they are coated well. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

    Sear the Chicken: Heat the olive oil in a large oven-proof skillet over medium-high heat. Remove the chicken from the marinade (keeping the marinade) and place it skin side down in the skillet. Sear for about 5-7 minutes until the skin is crispy and golden brown. Flip and cook for an additional 5 minutes on the other side. Remove the chicken from the skillet and set it aside.

      Sauté the Onions: In the same skillet, add the diced onion and cook until soft and translucent, about 5 minutes.

        Prepare the Glaze: Pour the reserved marinade into the skillet with the sautéed onions. Bring it to a boil, then reduce the heat to low and simmer for about 10 minutes until slightly thickened.

          Bake the Chicken: Preheat your oven to 375°F (190°C). Return the chicken to the skillet, skin side up, and spoon some of the glaze over the top. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until the internal temperature of the chicken reaches 165°F (75°C).

            Serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Spoon more Guinness glaze over the chicken, garnish with chopped parsley, and serve hot with your choice of sides like mashed potatoes or steamed vegetables.
