For the Beef Stew:

2 lbs beef chuck, cut into 1-inch cubes

4 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

4 carrots, sliced

3 parsnips, sliced

4 cups beef broth

1 can (14 oz) Guinness stout (or a non-alcoholic stout)

2 tablespoons tomato paste

2 teaspoons dried thyme

2 bay leaves

Salt and pepper to taste

For the Cheddar Herb Dumplings:

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup sharp cheddar cheese, grated

2 tablespoons fresh parsley, chopped

2 tablespoons fresh chives, chopped

⅔ cup buttermilk

Instructions
 

Prepare the Beef Stew:

    - Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat.

      - Season the beef cubes with salt and pepper, then brown them in batches. Ensure they are browned on all sides, then remove them from the pot and set aside.

        Sauté Vegetables:

          - In the same pot, add the remaining 2 tablespoons of olive oil, then add diced onion, cooking until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional minute.

            Combine Ingredients:

              - Add the sliced carrots and parsnips to the pot. Cook for about 5 minutes, stirring occasionally.

                - Return the browned beef to the pot, then stir in the tomato paste, thyme, and bay leaves.

                  Add Liquids:

                    - Pour in the beef broth and Guinness stout. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for at least 1.5 to 2 hours, or until the beef is tender.

                      Make the Dumplings:

                        - In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.

                          - Fold in the grated cheddar and chopped herbs. Slowly add the buttermilk, mixing until just combined (do not overmix).

                            Add Dumplings to Stew:
