8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup Guinness stout (non-alcoholic version if preferred)

2 cups sharp Irish cheddar cheese, grated

1 cup Gruyère cheese, grated

1 teaspoon Dijon mustard

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup panko breadcrumbs

2 tablespoons melted butter (for topping)

Fresh chives, chopped (for garnish)

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the 2 tablespoons of butter over medium heat. Once melted, whisk in the flour until smooth, cooking for about 1 minute to form a roux.

      Add Liquids: Gradually whisk in the milk and Guinness, stirring constantly until the mixture thickens (about 5-7 minutes).

        Incorporate Cheese: Remove from heat and stir in the sharp Irish cheddar and Gruyère cheeses until melted and creamy. Add the Dijon mustard, garlic powder, onion powder, and season with salt and pepper to taste.

          Combine with Pasta: Fold in the cooked macaroni until well-coated with the cheese sauce.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Pour the mac and cheese into a greased baking dish.

              Add Topping: Mix the panko breadcrumbs with 2 tablespoons of melted butter and sprinkle evenly over the mac and cheese.

                Bake: Bake in the preheated oven for 20-25 minutes or until the top is golden and crispy.
